5 Ways to Top Pancakes

Ah, pancakes. A delicious breakfast staple! Who doesn’t have childhood memories of sitting down drench those sweet little fluffy bites of batter with way too much syrup?


Well, as I’ve aged I’ve come to the realization that while the traditional pancakes with maple syrup is delicious (though I’ve upped my game from that nasty fake stuff in the microwave bottle to real syrup from a local farm), pancakes are actually a really easy food to dress up any way you like.

And that’s my favorite kind of food. You want to know why? Because that means I can make a ridiculous amount at a time and stuff my freezer with leftovers. Then, when I’m in the mood I can just pop them in the toaster. If that mood happens to strike three days in a row, well, I can make them into something different every time!

My Favorite Pancake Toppings

  • Frozen blueberries just slightly warmed up – then they are still firm, but sweeter than when they are completely frozen. It gives a nice contrasting texture.

  • Smashed strawberries with coconut and cacao nibs – truthfully, I will add shredded coconut and cacao nibs to just about any of these suggestions because they give a nice sweetness and a crunch.

  • Matter’s Farm to Table flavored syrups – I love infused syrup! It’s a great way to add sweetness but also change the flavor profile. Matter’s Farm is my favorite because they are local, but they have great infused flavors like vanilla, cinnamon, pumpkin spice and coffee.

  • Sunbutter – Sometimes I’ll still do a light drizzle of syrup on this one because I do use unsweetened Sunbutter. However, the creamy goodness works well on pancakes while also giving some extra protein and fat to make it a little more filling.

  • Cooked strawberries – And it doesn’t have to be over the stove. If you take frozen strawberries and heat them up for a minute or so in the microwave and then mash up the chunks, you’ll end up with a strawberry sauce perfect for drizzling.
