5 Easy Lunches - Vegan and Allergy-Friendly

I swear, this is one of the hardest to plan meals for most people. In my opinion, we often overcomplicate our midday meal.
Today, I’ve got 5 quick ideas to get you through your afternoon slump. The best part is? These vegan and allergy-friendly meal ideas area all very versatile and easy to swap. Don’t like quinoa? Use rice! Don’t like tofu? Use beans or mock meat. Wild rice soup isn’t your jam? Make your favorite!
What I’m giving you here is simply a foundation of ideas. Expand or change it up however you see fit. Really, with the basic list here you’ve got endless possibilities.

1. Leftovers – I’m not talking traditional leftovers, but all those little bits you have sitting in the fridge. Toss them over some spinach and use your favorite dressing to make a salad.
2. Creamy chickpea wild rice soup – This easy recipe can be made in big batches on the weekend to enjoy throughout the week. It’s also freezer friendly.
3. Buffalo tofu– The tofu can be served cold so go ahead and make a big batch to serve on salads, grain bowls, or sandwiches through the week. Don’t like buffalo? Use whatever your favorite sauce or topping is.
4. Grain bowls – I like to make big batches of quinoa or rice, add some spinach, and a steam in the bag veggies like sweet potato. Then I’ll do a hearty topping like hummus to make a filling lunch.
5. Pasta – Always an easy one! We make pasta multiple times a week so we always have some leftover. I prefer to use the lentil variety to pack in some protein. Add some steam in the bag veggies and canned tomato sauce. Spice it up the way you like it – I usually add extra basil, oregano, and garlic.
That’s all there is to it! Remember, the more you can prep some base things, like grains or proteins, at the beginning of the week, the easier it will be to just grab and go.
