Gluten-Free Banana Oat Loaf
This week I have another recipe – Gluten-free, vegan, banana oat loaf.
This recipe is a big hit in my house. Kiddo doesn’t like the texture of most baked goods, so she doesn’t care for traditional banana bread. This baked loaf is packed with oats which gives it enough of a texture change for her to love it.
Everything comes together pretty fast and with ingredients you probably already have.
I’m keeping things short and sweet this week, just like this recipe! So let’s dig in to the ingredients.
2 Cups oat flour
2 Cups oats
2 tsp Baking powder
1 tsp Baking soda
3 Ripe bananas
1 tsp Cinnamon
1/2 Cup coconut sugar
2 Flax eggs
2 tsp Vinegar
1 tsp Vanilla extract
1/2 tsp Salt
1/4 cup Sunbutter
I like to start by mixing up my flax eggs. If you’ve never done this before, one flax egg is 1TBS ground flax seed mixed with 4TBS of water. Let that sit for 3-5 minutes and your go.
Let’s move on to the dry ingredients. Go ahead and mix your oat flour with the oats, baking powder, baking soda, cinnamon and salt.
Next up, grab another bowl to mash up the bananas. Add in the remaining ingredients. Don’t make the same mistake I did, make sure your bowl is big enough to accommodate everything!
Then you’ll combine the dry and the wet ingredients together. This is a very sturdy recipe, so bust out those muscles here!
Pour into a parchment lined loaf pan and bake 60-70min at 350.
Let it cool 10 minutes in the pan, then finish cooling on a rack. That’s all there is to it!
